First of all you need to decide how you want to bill. Hourly or Just give him a firm price. Both have there advantages. Hourly is good because it is very simple. You say i want $$ per Hour. And then do the work. Then down side is people usually don’t like to realize how much you make off of them. They would be much more willing to pay you $350 to do a job that took you 2 days (5 hours each) then to pay $35 an hour for ten hours. Plus people will watch you and tend to get upset if you are taking a break or seem to be taking your sweet time.
Now as far as the firm price goes. that’s gonna take some thinking on your part. You need to figure out how long you think its going to take to do the job. you can figure it as a whole job or put a price for the trim (very easy) and then the closets (more challenging) each on the quote. Be sure to explain in detail what you are goingg to do. You then take the time and what you want an hour together to get your total price. (only put the totals on it not the hours or wage per hour) When you give to the client be sure to have him read and then sign it. so that he understand what you are goin to do and how much he will pay.
Also make sure to note that the client will be paying for materials and that you will need that money upfront.

what do you mean gravity fed? where does your general water come from in the first place and how do you get more of it? like are you in the country on a well, you can crank up the pressure on the controller. The other options that must be considered is possible restrictions in the pipes, like too old iron pipes rust on the inside and really slow down the water
